As the island approaches the peak of high season, sometimes you just want to get away from the hustle and bustle of Ibiza’s vibrant nightlife hotspots. Or, perhaps, you are celebrating a special occasion during your time on the White Isle and want to really wow your guests with a culinary experience to remember. Offering a breath-taking seaside location, tranquillity and show-stopping cuisine is The View, one of the outstanding onsite restaurants within the renowned Seven Pines Resort Ibiza.

Opening its doors in the summer of 2018, the five-star spa hotel has elevated itself to the top of the island’s accommodation offering in record time. Part of the distinguished resort are two restaurants; the relaxed and colourful Cone Club and the elegant The View. Having previously enjoyed a leisurely lunch at Cone Club and having heard friends describe The View’s Mediterranean and Asian fusion creations as ‘possible the best food on Ibiza’, we couldn’t wait to check it out for ourselves – and we were far from disappointed!

Sitting proudly atop the cliffs between famous sunset spot Cala Conta and the secluded Cala Codolar, as we made our way through the sprawling gardens and up to the glass-fronted balcony dining space our jaws dropped at the sight of the vast blue expanse unfolding in front of us, featuring unrivalled cinematic views on the mysterious rock island of Es Vedra.The dramatic scenery was complimented by a sophisticated and understated grey and blue colour palette, with an atmospheric soundtrack mixed live by island favourite DJ Chris Coco on Cone Club’s bustling terrace drifting up to our ears.

It would have been criminal not to start the night with an aromatic cocktail from The View’s signature collection and we toasted the occasion with a Japanese Mule – an elegant sparkling and zesty concoction made with vodka, lemon juice, yuzu puree, angostura bitter and yasmin tea topped with violet foam – and the sweet and sassy Geisha Vibe mixed from raspberry-infused vodka, umeshu, lime juice, chamomile syrup, raspberry and a spritz of cava. The fruity Lavanda Breeze, another original creation with gin, sake, blackberry liqueur, lavender bitter and cava rounded off our exotic and aromatic selection.

The View offers an exciting fusion of premium Mediterranean produce and Asian cuisine, spoiling even the most discerning of palettes with fresh fish and fine meats prepared on the Japanese Robata grill. Dishes from all corners of the Far East are represented, with plates from Thailand, Singapore and China bidding for your attention. Knowing we were in expert hands, we left our food selection in the expert hands of Executive Chef Andres Fernandez. As we watched the sun go down in a striking display that turned the sky orange and gold, our first treat appeared in the form of an amuse bouche: a delightfully squidgy steamed bun filled with tender slow-cooked pork that whetted our collective appetite for the feast to follow!

It wasn’t long before another selection of taste bud teasers followed, each and every one a sensation of flavours and textures. We swooned over a crispy filo pastry cone filled with avocado cream and blue shrimp tartar, as well as moreish tempura softshell crab bites to be dipped in an addictive wasabi cream. Refreshing cubes of melon infused with yuzu and sake were offered to cleanse our palettes for the next round of plates.

As night began to fall and a myriad of lights illuminated our viewing platform overlooking Es Vedra, our dinner began in earnest as the starters arrived. Delicate slices of grilled scallop sashimi were served with a seaweed salad that had been marinated in seawater, while the sautéed Mediterranean calamari were juxtaposed with the savoury flavour of Char Siu barbecue pork crackling and accompanied by a classic Spanish almond and garlic cream.

Juicy chunks of king crab in a light tempura batter almost caused us to fork-fight over the last bites, with the luxurious semi-seared Hamachi served in a Japanese pear, dashi and sake dressing, also disappeared in seconds. A green papaya salad, the national dish of Thailand, was zesty and refreshing – perfect for a hot summer night!

For our main courses, we were treated to a spectacular glazed octopus that delivered an Asian twist on the classic Mediterranean favourite. The Wagyu Beef Striploin from the Robata was another must-try, so soft it melted in the mouth and served with sides of aromatic black garlic puree and crunchy cabbage. Seafood lovers will be in seventh foodie heaven when trying the divine grilled lobster, its sweet meat tender and luxurious. Last, but not least, the Red Snapper fillet was paired with a fragrant bonito stock and savoury Iberian ham foam for total gourmet bliss.

After so much goodness, we only had a little room left for desserts but we were willing to give it a try. The Vietnamese banana cake served with passion fruit sorbet and dollops of rich chocolate mousse was an instant favourite, while no lover of Asian cuisine could forego the creamy sticky rice with tropical mango. However, the star of the show, in our humble opinion, was the Pure White – an artfully arranged platter of yoghurt-based treats in a variety of textures that was creamy, light and utterly delicious. We helped these last bites slide down with an Austrian dessert wine that was sweet but balanced with an interesting element of saltiness.
