Located in Ibiza’s tranquil countryside, arriving Agroturismo Atzaro feels like entering a different world, a bubble shielding you from all the stresses and strains lying beyond its magical realms. No matter how many times you have visited this luxury oasis, the sight of the authentic 300-year-old main building, shrouded by pink bougainvillea and surrounded by a majestic mountain range never fails to impress. This summer, hotel residents and outside visitors alike are invited to stop by the venue’s La Veranda restaurant and while away a few sun-drenched hours fuelled by a delicious culinary offering and outstanding service. Eager to check out new executive chef Sebastian Blanco’s creations, we took a seat at the soon to be generously laden table underneath the vine-entangled canopy.

Until September, La Veranda is open for breakfast, lunch and – a combination of the two – brunch, and we couldn’t think of a more blissful setting. Keen to make a healthy start, we began our meal with a superfood-powdered ‘After Party’ juice made with beetroot, celery and pineapple, and fresh coconut water right out of its natural – and very Instagrammable – shell. Overlooking the gnarly olive trees, flowering rose bushes and the green foliage-covered ceiling shading us from the sun, we could feel all the stresses of high season melt away.

Soon, our starters arrived, artistic masterpieces in both presentation and flavours. A zesty and light summer dish, the Peruvian corvina tiradito wowed with its delicate slithers of premium quality fish, colourful spears of beetroot and an indulgent marinade of cava sangria, passion fruit and citrus fruits. A tender tuna tartar served with an aromatic avocado emulsion and crunchy artichoke chips disappeared within seconds, while a salad made from crunchy greens grown within the grounds of Atzaro was arranged to look like a miniature vegetable patch. Another showstopper of a plate, and possibly – though its tough to call – the table favourite were the luxurious prawn and avocado cannelloni, the familiar tubular shape made from Pedro Ximenez white wine jelly instead of the traditional pasta. Juxtaposed against the sweet slices of fresh prawn, the dish was a feast of both textures and flavours coming together.

After a suitable break during which we made a little trip to Atzaro’s onsite boutique – dangerous if you’ve been indulging in cocktails rather than juice – we returned to our table just in time for the mains to be brought out. Here, Blanco was flexing his Mediterranean muscles, treating us to luxurious lobster ‘caldereta’, a fragrant stew bursting with pieces of tender crustacean meat and crunchy cubes of bread, as well as a traditional ‘fideua’, a paella-style dish made with noodles that offered the same irresistible sea flavours as the rice version, and was topped with thinly sliced, juicy king prawns. Last, but by no means least, the chicken terrine was served with a plum crumble, dried apricot and pine nut praline, offering a fabulous contrast of sweet and savoury aromas. We washed this hearty and summery feast down with an elegant, extremely pale and light Gris Blanc rosé, a top recommendation that suits both Asian-inspired and Mediterranean cuisine perfectly.

For a last and very generous treat, the Atzaro team invited us to enjoy our desserts in the heavenly surroundings of the hotel’s famous spa area, a true oasis of fragrant orange trees dotted with the biggest, most comfortable canopy daybeds you could possibly imagine. At its centre lies the iconic statement pool, luring us for an afternoon swim with its turquoise glow. However, first things first, and we had some serious sweets to attend. Sharing between four, we indulged our cravings with the rich and intense Chocolate Lovers, a cacao-fuelled masterclass of textures and different chocolate varieties. Those who follow a specialist diet will be delighted to find the raw-vegan tart on the menu, a dense, crumbly muesli base topped with a light red berry mousse. Diners who prefer to keep it light in the summer heat will LOVE the pineapple sorbet marinated with exotic coriander and served on a bed of almond crumble and topped with coconut foam. As you can imagine, we were very reluctant to leave, and, eyeing up the spa menu with its gorgeous facials and relaxing massages, decided that the call of our office desk could wait a little longer…
