It’s no secret that the White Isle’s demand for vegetarian and vegan food is booming as Ibiza continues to establish itself as not only a popular foodie, but also a wellness destination. Proving that they have their collective finger firmly on the pulse of what makes the island’s culinary scene tick, the team behind Mexican restaurant Peyote Ibiza Bay has introduced a new plant-based menu in addition to its mouth-watering offering of seafood and meat dishes. We went along to check it out…

Residing in the luxury Nobu Hotel Ibiza Bay and overlooking the sparkling bay of Talamanca, the stylish eatery is located on the sprawling terrace area to the left of the hotel’s sleek turquoise statement pool and makes for the perfect spot to enjoy an light and breezy summer’s lunch. As we approached our huge circular table, we were dazzled by the gleaming white parasols set off against the blue sky, the effortlessly chic décor and hip design details. Inside, the restaurant is just as stylish, with a cool neon artwork spelling out ‘All you need is love, or maybe, mezcal’ taking pride of place next to the copper and marble bar.

Peyote Ibiza Bay champions modern Mexican cuisine and is renowned for its superb tequila selection and mezcal-infused cocktails. We have previously enjoyed feasting on the regular a la carte menu, so we knew we were in for a very special treat. Welcomed by the friendly team headed up by Valentina and Elvis, we let them choose a selection of dishes to share for us. It wasn’t long before a selection of colourful – and beautifully styled – cocktails arrived at our table; including a deep purple Wild Berry Margarita with a spicy tajín rim made from chilli, salt and lime juice. Mixed with fresh berries, the flavour was deliciously sweet but completely natural, with the tequila inside providing as much as a kick as the salt and spice coating adorning the glass. We also tried the Kodiaq, a light and refreshing mix of Hendricks gin, white wine and elderflower syrup that was decorated with slices of cucumber. Last, but not least, the Dress-Up wowed with fruity mix of lime and apple aromas fuelled by zesty limoncello and a dash of Belvedere vodka.

A first selection of dishes arrived and our eyes were on stalks as we took in the gorgeous presentation and popping colours. A bowl of classic guacamole topped with red onion, tomato chunks and fresh coriander was first, to be scooped up with homemade ‘tostada’ pancakes and served with a trio of irresistible dips including the utterly addictive salsa macha that tasted like a smoky peanut butter mix. An instant table favourite, a huge stack of Jicama root was served with a simple and classic Mexican dressing of lime, mint and tajín. Crunchy and juicy in texture, the apple-like flavour was enhanced by the fresh herbs and spices, and we were fighting over the last bite.

A delicate beetroot ceviche in a zesty sweet and sour marinade, and a quinoa salad brimming with vegetables such as crunchy asparagus and datterino tomato, topped with a sprinkling of local almonds and a honey and mint dressing completed our selection of starters. After this first round of plant-based dishes, we happily announced that if we could eat this kind of food every day, we wouldn’t mind going vegan.

While we were waiting for our main course to arrive, the team brought out a sharing platter of jackfruit tacos marinated in red seeds for us to try, a tangy concoction that contrasted the almost meat-like texture of the fruit against the soft taco base – utterly moreish. Having finished off our cocktails, we moved on to a gorgeous pale Hedonism(e) Grenache rose from Peyote’s carefully curated list of organic wines. With the sun beaming down on us, and the sleek boats swaying on the dazzling waters in front of us, it really was a picture-perfect day for lunch.

Now, as we mentioned, we had been wowed by Peyote Ibiza Bay before – but we weren’t prepared for the sight of a huge whole cauliflower being carried over to our table, much heavier and voluminous than we are accustomed to! Intended to be shared between four people, the chargrilled vegetable was coated in red and green adobo sauce and accompanied by an assortment of dips, fresh herbs and spices to be either sprinkled atop or rolled up with the cauliflower in a soft tortilla, like a vegetarian fajita. After we had contained ourselves enough from this initial wow factor, we tucked into the Col a la Talla with gusto, enjoying the spicy kick from the red side and the refreshing mint flavour of the green half. It is also noteworthy that the regular Peyote Ibiza Bay menu features a fish and meat version of this delicious dish – and we highly encourage you to try them all!

Having feasted on this rather healthy selection of plates, we decided we could go a little wilder with the desserts and practically begged head chef Franco to bring out the heavenly Tres Leches cake we had tried the previous year, a gluten-free vanilla sponge cream with a red berry jam centre that is covered in whipped cream and fresh fruits and served with milk ice cream. We also tried Peyote’s decadent version of the humble churro, big fluffy pastry balls covered in a sugar and spices and served with two indulgent dips of chocolate and caramel. Last, but not least, the restaurant’s signature Peyote Lollipop – rich dark chocolate filled with lime, mango and avocado ice cream – filled the last remaining millimetres in our happy bellies. It’s probably obvious that we will be back…
