With this in mind, Nikkei restaurant Coricancha is hosting a charity dinner in aid of the Aldea Yanapay School in Cuzco, Peru. While in many European countries education is taken for granted, you can support those who study in more challenging conditions while enjoying an atmospheric culinary experience of the highest standard. On Saturday, September 7th, the beautiful Inca-inspired cocktail bar and garden restaurant in the Salinas Nature Park invites to try a special charity tasting menu – all for a good cause. Nikkei cuisine is the fusion of traditional elements of Peruvian and Japanese cooking, and Coricancha’s mouth-watering menu combines this technique with contemporary international influences. Therefore, the link to a South American school is a perfect match. The restaurant’s sunset terrace overlooking the iconic Salinas salt fields is the perfect place to enjoy the White Isle’s breath-taking sunset with a crisp glass of G.H. Mumm, a welcome drink included in the special charity menu. And if you are lucky, you might even see a flock of flamingos taking flight! The culinary delights are equally as enticing as the views, with a variety of zesty ceviches and tiraditos, hearty anticucho prepared on the Robata grill, fresh sushi, fish dishes and premium meat cuts tempting your taste buds. As Coricancha’s culinary philosophy is all about sharing, the charity dinner menu is comprised of three courses of starters to be shared amongst your table, with highlights including the Barranco Ceviche with salmon, prawns and crispy squid, the Wagyu beef anticuchero or tuna tataki wrapped in nori seaweed and served with asparagus and shitake mushroom. For the main course, each guest chooses their own from a selection that includes Chilean sea bass cooked in a banana leaf, and melt-int-the-mouth glazed pork ribs served with sweet potato puree and black garlic cabbage slaw. A selection of desserts rounds off this mouth-watering feast. On the evening of the charity dinner, there will also be an exhibition by contemporary artists Raul33 on display. Titled ‘Ancient Vibrations’, his eye-catching urban art creations are bound to capture your imagination – and maybe you will even take one of them home! With a deep and hypnotic soundtrack of electronica setting the scene under the starry Ibicencan nightsky, a magical feast full of flavour awaits you.
