Ibiza Therapy Has Something For Your Mind, Body and Soul

Ibiza town dances to a different tune in winter, gone are the lengthy queues to enter the car park, and the hoards of tourists you sidestep in order to place yourself back onto the pavement you fell off. Instead, it is replaced with a smattering of cars and a leisurely stroll past the harbour. The spectacular view of Dalt Villa glimmering in the distance, led to a conversation about how amazing it is to live here, especially in the winter.

Myself and Charlie Chester (head of Essential Ibiza) had a work date planned, and we were heading straight to the Hotel Montesol. This symbolic neo-colonial hotel, set in an elegant 1933 building at the foot of Dalt Villa is the perfect setting for the monthly “Ibiza Therapy sessions” hosted by Ibiza Style magazine Jürgen Bushe. On arrival, we were graciously greeted at the door by Jürgen, and after a catch up with him and an introduction to tonight’s Michelin star chef, Dave, we anticipated a mouth-watering experience ahead of us.

First, we made ourselves comfortable at the bar, padded black leather stools allowed us to perch in comfort whilst the smartly uniformed bar tender prepared our drinks. At this point we briefly discussed how Charlie would go about rescuing his car the following morning (he had now sensibly decided to abandon vehicle for the evening). Once we agreed an early morning bike ride back to the car, we proceeded to tuck straight into our LAW gin and tonics served with a splash of juniper berries… delicious.

We were then walked to our table. The restaurant by now was full and buzzing with elegantly dressed clientele. I was relieved I had decided to dress appropriately, abandoning my usual “smart with a pair of trainers, look”. The DJ was already getting busy with the music, providing the perfect tunes, so that we were sporadically tapping our feet and without the need to shout to make ourselves heard. Our appetiser arrived, flaky home-made nori cracker sticks with a dip of sundried tomato served with a small dish of sesame seed. These we used to complete our newly invented ritual of rolling the stick in seeds before consuming, this seemed perfectly acceptable to us, even though I couldn’t see anyone else participating, more fool them! And even more acceptable as we finished our second delicious round of LAW and tonic!

Next came the Burrata, served with an avocado and tomato cream. Burrata is one of my favourite starters and by the looks of how quickly Charlie’s disappeared, his also! By now our attention was drawn to a spectacular performance going on at the tables around us. I kept swivelling around on my chair to try and suss-out what it was all about. Next it was our turn for the experience. I quickly grabbed my IPhone flicked it onto Boomerang and took that essential Instagram video, (‘pics or it didn’t happen’). During the performance, a huge vat of nitrogen acid was brought out, smoking dry Ice over the sides of the table. The waiter stylishly and at great speed, whisked the nitrogen whilst pouring what looked like tomato juice into the middle of the dish. Three minutes later and voila, we were eating a sensational ice-cold tomato soup; well, actually it was a ‘Bloody Mary sorbet with nitrogen olive oil and Sal de Ibiza’, a fantastic dish and a video on my Instagram feed… perfect!

We finished with a delicious lemon hazelnut ice cream dessert, and, of course, a few more drinks. We then left our table to join in on what was now a full-on party. It had been an incredible evening, amazing food, great music and most of all a blast of Ibiza energy in the cosiest and sophisticated of environments. I will undoubtedly be booking a table for the next ‘Ibiza Therapy Session’ next month, although next time I will advise Charlie to leave his car at home!
