One of the island’s most vibrant luxury brands, Ushuaïa Ibiza’s signature style of hospitality is one that effortlessly balances premium quality cuisine with impeccable service and heady surroundings, continuously managing to surprise and surpass its discerning clientele’s high expectations. Our recent lunch outing to The Oyster & Caviar Bar, located by the striking red poolside of the Ushuaïa Tower Hotel, did just that. We expected indulgent treats in a luxurious setting and that’s exactly what we got – but tenfold.

Even the eatery’s name suggests that diners can expect only the best of the best. But while seafood delicatessen of course play a starring role in The Oyster & Caviar Bar’s food offering, the menu is carefully balanced to cater to a variety of tastes and includes several hearty meat dishes, pastas and rices, sushi, ceviche, healthy salads and classic Spanish treats. So if you are planning to dine out with a big group of people, even the fussiest eaters will comfortably have several options to choose from.

Arriving to The Oyster & Caviar Bar sets the scene for the spectacular meal ahead; make your way through a lush green tunnel of banana plants that opens up to the statement pool surrounded by plush daybeds at the heart of the Ushuaïa Tower. Taking our seats on the – quite literally – cheeky derriere-shaped chairs, energetic house music beats had us shimmying along in no time. In the sizzling summer heat, the red-tiled swimming pool looked incredibly tempting and we were not surprised that almost every sun lounger was already taken by the trendy posse that inhabits the hotel.

Excited about the culinary treats ahead, we toasted the occasion with a round of cocktails – and one healthy detox juice! The Passion Fruit Frozen Margarita was a perfect summer cooler with a kick, while the tropical sweetness of a classic Pina Colada slid down like a creamy milkshake – dangerous! Something a little different, the smoky Maguey Sour from the Nikkei-Style section of the cocktail menu wowed with a zesty and potent mix of Casamigos Mezcal, lemon juice, agave syrup, a twist of orange and a hint of nutmeg. For the saints on our table (read: the only one), the fruity Pink Waterberry Smoothie made from tropical superfood pink pitaya, watermelon, strawberries, ginger and orange juice offered a vitamin boost as well as an irresistible flavour sensation. Meanwhile, a live saxophone player had taken to the pedestal by the pool and was jamming along to the infectious house tracks, delivering a quintessential ‘pinch me I’m in Ibiza’ moment.

While we hungrily eyed up the colourful sushi rolls floating past us to neighbouring tables, our own ‘amuse bouche’ lunch opener arrived: three huge Amelie Fine de Claire oysters, each topped with a different sauce and a sprinkling of caviar. Even to those of us who aren’t oyster connoisseurs it was immediately obvious that the specimens in front of us were of the highest quality. Huge, plump and silky, their refreshing and elegant sea aromas burst in the mouth, enhanced respectively by a tangy tomato sauce and savoury caviar, a raspberry dressing topped with spicy fish eggs and a passion fruit salsa combined with sweet roe.

After this spectacular entrance, it wasn’t long before the mains arrived; each a swoon-worthy plate presented like a piece of art. The trendy Tuna and Salmon Poke Bowl was laden with delicate slices of fresh fish and accompanied by healthy raw veggies draped over a satisfying mound of sushi rice. Meat lovers should not miss the free-range Ibicencan style chicken, perfectly succulent pieces in a crispy skin served with aromatic oven-grilled vegetables and a slightly spicy chipotle chilli sauce. We also shared a colourful Superfood Salad that wowed with its mix of flavours and textures and was easily delicious enough to enjoy on its own; a tower made up of layers of quinoa, beetroot, feta cheese, spinach and almonds drenched in a lively citrus sauce.

Not able to resist the divine fish offering, we savoured an expertly prepared Bluefin tuna served alongside addictive vegetable tempura on a silky bed of celeriac puree. However, the star of the show was the incredible Traditional Seabass Ceviche. The plump yet tender pieces of white fish were swimming in a yellow chilli tiger milk while caramelised corn made for a crunchy and sweet surprise, juxtaposed against creamy avocado chunks. It was easily one of the best ceviche we have had the pleasure of trying, and one we would return to The Oyster & Caviar Bar for alone. A chilled bottle of Urban Cotes de Provence rosé wine helped us to wash down the feast in style. Inspired by our enthusiasm for this Nikkei classic, the chef went above and beyond and surprised us with two further – especially made for us – ceviche creations, simply stunning plates dazzling with colours, flavours and textures. A whisper of sliced salmon was drowning in a sea of cherry and yuzu tiger milk with a potent chilli kick to it, while on the other end of the spectrum, delicate tuna pieces were floating in a sweet coconut milk with pico de gallo quinoa and pickled radish.

If you can believe us that we still found room for dessert… it’s true! And who could resist such decadent treats as a deconstructed cheesecake served in a mini mason jar, a doorstopper size chocolate ice cream sandwich or a heavenly berry mousse encased in white chocolate? Exactly… With all our senses well and truly blown, we ended our afternoon of exotic decadence with firm plans to return, having discovered several new gourmet treats we would love to savour again and again… possibly from one of the giant daybeds by the pool or the VIP suites on the top level complete with private pool!
