A successful summer is celebrated in style on a September night in Salinas. Here we go – the start of the end of yet another fantastic season is upon us. A summer full of memorable moments will soon be behind us as we step into the peaceful autumn and rest and recuperation period on the island.

The Nikkei restaurant Coricancha is first in line celebrating an amazingly successful summer. Many summer nights have been enjoyed at this wonderfully located Salinas road restaurant. Sitting on the sunset terrace overlooking the salt plains and admiring the sun going to bed behind Es Vedra, whilst reflecting its rays on the graceful pink flamingos that have given us the privilege to be in their presence for most of the summer, is a moment to cherish. And anyone who came to the hugely successful ENTER Sake by Richie Hawtin night will know that such a collaboration again will be hugely awaited next year.

This Japanese – Peruvian member of the Blue Marlin Ibiza group was naturally a popular destination on its last night of the season, with yet another fully booked soiree in the restaurant. As we enter we are met by the friendly staff that immediately proceeded to present us with a gorgeous Strawberry Pisco sour, as pink as the flamingos, in the candle lit Moonlight garden bar where a steady flow of delicious plates emerges from the kitchen to please those lucky enough to have secured a reservation.

Coricancha – aptly named after the Temple of the Sun – is filling up and soon we are treated to the mesmerising sounds of Banjaara who have been entertaining diners every Wednesday throughout the season. Their sound brings even more magic to the evening, and is succeeded by the fantastic DJ Bruce Hill, Blue Marlin Ibiza resident to take us further into the night. General Manager Ivano Recchia rounds it up perfectly for us – “the season has been awesome, feedback is awesome, the food was even MORE awesome than before – a total achievement by everyone” Thank you and good night. Personally, I have already started the countdown for the reopening of this Las Salinas gem as we make our exit into the starlit night and close the door on this year.
