The Hierbas Experience At Kasbah

Although Ibiza’s party scene is essentially one of the prime associations with the island, further attractions exist which are equally spectacular and enable islanders to dip their toes in to true Ibizan culture and heritage. An excellent example of a staple Ibiza tradition is Hierbas, produced right here on the precious White Isle and guess what? You can now be a part of one of Ibiza’s deep rooted origins thanks to Kasbah’s Hierbas making class, the perfect island experience for groups of friends, couples and wedding parties.

The Hierbas classes are conducted by Phillip Thomas, originally from New Zealand and currently residing in Ibiza for his eighth year – he certainly knows a thing or two about the island. Phil is the head alchemist at his very own newly established company The Drink Workshop, a business centred on the sharing of experiences and tapping into the history behind drink traditions. As far as passions go, Phil’s are evident, with his enthusiasm for producing an array of beverages from scratch – vodka, distilled brandy, gin and even his own tonic water, to name only a few! The decision to work alongside Kasbah on this project was simply down to his appreciation for the beach side haven, and we couldn’t agree more! Mixing and sipping one of Ibiza’s most cherished traditional drinks, whilst staring out to the Mediterranean sea views that Kasbah so beautifully offers, creates a picture of the most magnificent combination, and we couldn’t wait to do just this.

A gorgeous collection of various shapes and sized glass jars and bottles stood on one of Kasbah’s rustic wooden tables, filled with ingredients for the beverage masterclass. As we admired the beauty of the presentation, we sipped on Kasbah’s newest cocktail – prosecco combined with strawberry sangria, a delightful melody of fruity freshness. Phil began to take us through a historical journey of Hierbas and its ingredients. For over a century, every Ibizan family had its own Hierbas recipe secret, which made it uniquely special to their name, and became a part of their family tradition. Now, Ibiza holds a strong Hierbas culture, which is even protected by the law – an interesting fact we learned. The alcoholic drink consists of mainly anise, said to aid digestion, and various herbs which have been scientifically proven to carry health benefits. Phil produces his own anise with vodka, fennel and sugar, which he brought with him to the class, and lightly floated in a stunning oversized blue flask nestled amongst the herbed jars. Hierbas contains between 18-29 different kinds of herbs, which include: Rue, Lemon Vebena, Rosemary, Lavender, Chamomile, Sage, Juniper (twig and berries), Thyme, Bay leaves, Helichrysum stoechas, fennel seeds, fennel flowers, orange leafs, lemon leafs and mint.

Phil described how he travels to farms and fields across the island, where he sources all the herbs used for his Hierbas recipe, making it even more of a unique offering from the exquisite island. He has produced bottles, which have not yet been opened for over two years, explaining that Hierbas can last indefinitely. Whilst we all listened in awe, we picked on several delicious small plates of asparagus with crispy poached egg and hollandaise, prawns with mango and avocado mousse and citrus soy tuna, spring onion and pomegranate – scrumptious new additions to the Kasbah starters and sharing menu. It was now time to create our own Hierbas with Phil’s guidance and recipe knowledge, after an insightful education on the heritage drink. We were each handed an empty tall glass bottle, which would become our Hierbas drink. The herbs were a beautiful sight as they slowly towered and intertwined with each other as we dropped more ingredients through, later floating as the anise poured in. Next, we inserted a cork screw top to secure the opening of the bottle, and dipped it head first in to hot red wax, which offers a divine aesthetic finish, as the wax dripped down in different directions and set on the bottle. Phil provided bottle stickers on which we wrote our names, the date and alcoholic volume (25%) for a personal touch, which we absolutely loved.

It was evident that we all felt super proud of our creation, and even more excited to have our own Hierbas to take home to show our friends and loved ones! It was an amazing moment seeing our completed bottles stood on the table as the fiery sun set behind it, both views symbolising the pure essence of Ibiza. The Drink Workshop Hierbas making experience expertly taught by Phil, was an incredibly refreshing experience and one that we will certainly recommend for a pure flavour of Ibizan culture.
