La Dispensa: Sushi Dreams In Dalt Vila

Looking like something out of a fairytale, the historical Dalt Vila in Ibiza Town makes for a spectacular dinner destination any day of the week. But since the Essential Ibiza crew discovered the quirky quality eatery that is La Dispensa, we find ourselves back on the cobbles of Cala Santa Creu more and more regularly.

Our love affair with the charming culinary concept, which is spread across several of the picturesque townhouses lining the famous street, began a couple of months ago when two of our team members discovered La Dispensa and worked their way through the width and breadth of the menu, which is largely celebrating Italian fare but also honours some classic Spanish dishes. Since then, we have returned for meals with friends, romantic dates and pretty much any other occasion we can think of. And on our last outing, we decided to finally try La Dispensa’s sushi menu.

Set back in one of the last couple of buildings that have been lovingly restored by owners Jose Luis and Christian, the Japanese extension of the restaurant huddle is more minimal in decor than its sister spaces, but shares the same attention to detail and hand-drawn menu illustrations. We take a seat outside the intimate property to better enjoy the view on the hustle and bustle that is the heart of Dalt Vila. As it is only 7pm, the network of cobbled streets and alleyways is still fairly empty, but starts to fill up to a vibrant level over the course of the evening – perfect for people watching!

Before we peruse the menu, our eye is caught by La Dispensa’s newest addition; a whimsical boutique filled with vintage designer fashion and current sartorial creations from both Ibizan and international brands, located directly opposite their sushi outlet. Like magpies, we can’t resist a snoop around the Alice In Wonderland style treasure trove, which also holds a big, fully dressed dinner table. We soon find out that the space is used for select culinary and shopping events, where guests can purchase anything they see and love in the store all the way down to the artwork and even furniture. We spy a vintage Moschino necklace, YSL heels and leather jackets with colourful embroidery and feather embellishment, and have to leave before the credit card involuntarily comes out.

Back at our table, we begin our meal with a chilled bottle of white wine, a dry Analivia Verdejo with refreshing citrus flavours, hints of stone fruit and floral aromas. With La Dispensa’s signature attention for detail, we are offered a basket filled with three different types of warm bread; one filled with nuts and dried fruit, one super soft variety with dried olives and one classic brown roll. The aioli is super mild, with delicious hints of basil and olive oil, and comes served in individual shot glasses to avoid awkward fights over the dipping bowl.

The first sushi dishes of the night arrive shortly after; salmon wrapped around a spicy tuna gunkan and the special California roll filled with king crab, cream cheese, cucumber, strawberry and topped with salmon. Both are delicious, the fish is soft and delicate, while the different fillings offer a fiery kick and creamy, sweet taste respectively that makes our mouth water for more. We also try a roll filled with juicy prawns and wrapped in fresh slices of zucchini, gentle in flavour and a light option perfect for hot summer nights.

We also couldn’t resist ordering a couple of the tempura rolls and were surprised when the first plate – the Hot Philadelphia Roll – was presented with a crispy outside as well as the battered salmon on the inside. The two indulgently crunchy textures combined with the sweetness of the fish made this a very satisfying and popular dish and an early contender for the evening’s favourite. The second variation of this addictive mix came with a tempura prawn filling and mustard-flavoured sauce on the crackling outer layer of seaweed. Simply divine!

However, our meal ended with a real game changer of sushi standards when the restaurant’s signature creation, the Dispensa roll, was put down in front of us. Tempura prawn was surrounded by rice and topped with flambéed salmon and a tomato sauce, a tantalizing and delicious combination of textures and flavours that wowed our whole group into silence. While there are no desserts on La Dispensa’s sushi menu, guests can of course fall back on the other outposts’ Mediterranean menu. But after the sensational sushi offering we had sampled, we actually felt perfectly happy to end the evening with a strong coffee. You know you’ve had exceptional food when you don’t want to ‘spoil’ the memories of the main course with a postre! See you again soonest, La Dispensa!
