Among the distinctive roads leaning on the impressive ancient walls of Dal Vila, the five-star Hotel Mirador de Dalt Vila presides over the port from Plaça de Espanya overlooking the Mediterranean. The madness of Ibiza in the summer does not reach this peaceful part of the Old Town, even though it’s only a few steps away.

An oasis of tranquility and elegance, the Mirador de dalt Vila represents Ibiza’s finer side, starting with its historical building, the boutique hotel, and its fine restaurant. A member of the Relais & Chateaux association, the Restaurante Es Mirador offers remarkable avant-garde Mediterranean cuisine and outstanding service, an unforgettable experience for the eyes and palate alike. As the temperature continues to rise, we enjoyed lunch on its charming terrace. Already feeling pampered and indulged, we settled down around one of the lovely tables on the terrace under centenary palm trees in front of the hotel. The views of the square, the Ibiza Cathedral directly across, and the characteristic Ibicencan buildings in this part of town alone are worth a visit. The hotel’s position in this secluded spot close to the top of the Dalt Vila, towering over the deep blue water further brings in a lovely sea breeze that’s perfect for those hot summer days. The Mirador’s terrace has the optimal setup, receiving morning sunshine for breakfast then shade as the temperatures rise. Add to it a very fresh and fruity Albariño Paco & Lola Rias Baixas, and the dreamy setup is complete.

The menu offers an innovative take on Mediterranean cuisine, enhancing traditional seafood and meat dishes with flavours and herbs from the island. Treated to a menu selected by Chef Juan Manuel Tur, we sat comfortably sipping on our wine and trying the warm bread brought to the table – white rolls, olive bread and whole wheat rolls with apricot and walnut were all delicious. Our appetizers soon followed, with a picture-perfect presentation and luscious aromas. Not on the menu, our first starter was the Iberian Pork with a black garlic sauce and pineapple cubes and arranged in a miniature skillet set over two white plates for a sophisticated look and juicy taste that flooded the mouth with complementary flavours.

With just enough time to admire the dish before devouring it before we were presented with the next course, a Marinated Tuna Salad with tomato branch, sweet corn cream, and sprouts, with the special tomatoes flown in from South America and dots of coloured sauces to enhance the slices of raw tuna, a delectable combination. Eating lunch on the terrace outside this beautiful period building, surrounded by centuries of history, time no longer becomes important. This is a place we could easily sit all day. As well as the stunning architecture, its also a great place to people watch. Chef Juan Manuel Tur has already impressed us previously with an amazing taster menu and now, as the focal point of our lunch is delivered to the table, he shows why he is one of the most respected chefs on the island. Our main course is a Confit Suckling Pig with melon, mango, and Sichuan pepper – crunchy and tender at the same time, the meat melted in the mouth and was surrounded by dabs of passion fruit and other sauces, with herbs and spices bringing out the taste further.

One would think after all these delicacies, we would’ve been full, but when the desserts showed up, we had to reconsider. Without exaggerating, the Iced Banana with soft mint sponge cake, apricot, lime, and Zacapa was divine. In little bites and sprinkles, the flavours, textures, and fragrances, on top of the inviting presentation, were irresistible, blending together for a rich and mouthwatering effect. Ending with another treat not on the menu, the Cream of Hibiscus and Mandarin with a chocolate truffle and crumble, we could not have been more pleased. The Restaurante Es Mirador offers a plush experience of Ibiza, with views of Dalt Vila’s prettiest roads, reimagined Mediterranean dishes, and natural Ibicencan flavours, it transports guests into a world of delicious and artistic refined cuisine in a spectacular setting for an experience to be remembered.
