A Magical Countryside Dinner At Aubergine Ibiza

On an island that seemingly never sleeps, with its bright lights and experiences aiming to be bigger and bolder than before, sometimes the call is for something a little more stripped back, authentic and soothing to the soul. With a philosophy deeply rooted in Mother Nature, Aubergine is Ibiza’s very own gastronomic sanctuary. Championing the farm-to-table movement, with no ingredient sourced further than nearby village Santa Gertrudis, there’s a special feeling that comes from knowing every forkful of food was lovingly grown and harvested. A countryside hideaway, Aubergine pushes more than just a passion for healthy food – promoting local talent and art, too – and a lot of thought goes into supporting the community.

Sitting rather unobtrusively on the long stretch of road running from Santa Gertrudis to San Miguel, it’s easy to overlook the restaurant taking shape as a white-washed finca amongst the scenery. Yet pulling up through the fencing reveals a whole other world. Part of the renowned Atzaro group, the venue is a dreamy picturesque garden in which upcycled pastel-green tables and chairs sit beneath vines hanging overhead. Pretty blooms of every kind circle the patio while sunflowers tower over the in-house vegetable patch where the majority of the produce is grown. Upon our entrance we walked past the large glass conservatory, where currently local artist Simona Marziani has been hosting an exhibition. A fantastically bright room, we’re told that here one-off gatherings, events and weddings take place when it’s not used as indoor dining space.

Taking our seats in the magical garden, we were just in time for sunset, the sight of the sky turning golden over stretches of countryside nothing short of divine. Every Sunday and Tuesday, live music features and tonight disco and 80s classics were gracing our ears. Kicking off with a refreshment, we decided to taste a little of everything from the drinks menu. A freshly made ‘Detox’ juice, Espresso Martini, Strawberry Daiquiri and a strawberry and watermelon-infused water had us suitably ready for the meal.

Presented with a selection of the chef’s recommendations we made our way through, to start, a fantastically juicy scallop salad with oranges and a peanut and honey sauce, alongside a refreshing kale salad with pear and pomegranate and a creamy aubergine parmigiana. The offering is not only fantastic for vegans and vegetarians but also for those looking for incredibly nutritious food crafted with elegance. We washed things down with a crisp bottle of rose from their extensive organic wine list. The water here is neither an afterthought, as we were served a bottle purified onsite through their osmosis system.

New for this season at Aubergine is the barbeque menu, with an outdoor grill serving organic and locally sourced meats and fish. We were presented with a selection of lamb chops, entrecote beef, lamb chops and tofu skewers in a wonderfully zingy harissa sauce. Everything was cooked to perfection, especially the beef steak which sits high in our rankings.

As the evening drew on, more and more guests began to filter in. The ambience all evening was wonderfully magical, as the soft sound of bubbly house created a light-hearted and warm vibe. Taking a moment to soak in the lit-up gardens and some more vino rosado, our desserts arrived after a suitable pause. Not quite ready for what was to come, after a stunning meal, the desserts were truly breath-taking. A trio of mousse-y passionfruit cheesecake, warm apple tart and vegan banoffee pie held us in stone-cold silence as we fought over the last spoonful. Impressively, the gluten-free cheesecake base and vegan cream on the pie were every bit as moreish, yet light on the stomach.

Finishing with a wander through the onsite boutique, stocking beautiful local garments, accessories and even adorable pet collars, we left to the sounds of the DJ spinning bubbly feel-good disco. Feeling pleasantly full and with a happy conscience knowing we’d fuelled up on the best ingredients, Aubergine is the all-year round countryside oasis suited to everyone.
