Start The Year With Ibiza Therapy

After the exertions of the festive period, the only way to start 2018 is with a bit of Therapy, Ibiza style. Thursday January 4 is the first edition of gastronomic adventure Ibiza Therapy in 2018, as the gathering that has offered fine dining, great company and deep beats returns to Café Montesol, courtesy of respected island publication Ibiza Style.

Chef Dave de Belder takes the finest local ingredients and delivers a fresh, organic, Michelin-star-level feast, setting the tone for the evening. Ibiza Therapy has been one of the most popular of the winter’s new concepts, bringing the island community together over a hearty meal, some fantastic cocktails, great conversation and performances from a selection of the most talented DJs. Law Gin is responsible for your welcome drink, putting you in the mood from the offset and, Thursday January 4 sees Dalibor Dadoff and Samuel Perez (piano) takeover the booth, anyone that has dropped into Cotton Beach Club will be familiar with the talented duo.

While there is definitely something for everyone during the course of Ibiza Therapy, even if you are not eating – the food is still the star of the show and for the first session of 2018, Chef Dave de Belder has produced a fitting feast. Enjoy some aioli crackers with your Law Gin welcome drink before the journey begins in earnest. Ibicencan potato foam with cured cheese, cauliflower praline, avruga caviar and chive; celer,; almonds, lemon spinach and wild rosemary is more than enough to get things started. For the main course, enjoy fresh sea bream fillet, caramelized shallot, goat yoghurt jus, chlorophyll of Ibicencan cabbage and burnt apple. Bringing the culinary masterclass to a conclusion is the frigola familia mari mayans in diced, frozen pineapple and carob coffee cream with passion fruit. Entry is free and if you prefer there is a selection of snacks at the bar, for those not looking to take part in the full meal.
