Visitors to Ibiza hit an all-time high in 2016 and, at the rate people have been landing on the island throughout April and into early May, that number promises to be smashed yet again. While Ibiza remains the world’s clubbing capital, there is a growing argument that this increase is partially down to foodies from across the world visiting the Balearic beauty to sample some of the world-class eateries that have emerged in recent years. If superstar DJs were the new rock stars in debades gone by then it’s fair to say that chefs are challenging them for island headlines nowadays? In Simone D’Elia, brand new Talamanca beach concept Rehab has a genuine superstar in the kitchen.

A trio of Dutch partners have pulled their creative energy as well as their impressive backgeound in lifestyle entertainment to offer Ibiza a stunning new beach concept, Rehab Ibiza, a fantastic beach restaurant/ lounge that is the latest addition to the island’s ever growing beach scene and one that has captured the imagination from the off. The Essential team dropped in to welcome our new Talamanca neighbours and were invited to try some of the delicious dishes on the menu and, given that we will go to any lengths to make sure you are completely up-to-date with what’s going on in Ibiza, we gladly accepted. Italian head chef Simoné dropped by the table to say hello and discuss his menu with us before feeding us. Having spent a good time on the island previously, he has built up a network or reliable local contacts/ sources and told us that making sure that his produce and ingredients were locally sourced wherever possible was of great importance to him. More and more people are very conscious about where their food is coming from and how it has been raised; something he puts a premium on, with a local butcher supplying only free range meat and his seafood caught just a few kilometres off the coast. Simoné’s style of cooking is very much one of simplicity, using the best produce, preparing it with minimal seasoning, offering a strong, natural flavour. As he explained this philosophy, at the same time dropping hints in what he would prepare, our mouths were already watering!

The menu features a combination of Asian and Mediterranean flavours, Rehab Ibiza has a separate sushi bar, so while the chef was busy with the first wave of dishes, we tried the super green vegetarian maki, California maki topped with roe salmon sashimi and spicy tuna maki. The sushi was fresh, perfectly packed and the combination of flavours exploded on the tongue. As we spend a bit of time in Asia looking after Essential Singapore, we are lucky to have eaten in some of the finest sushi restaurants in the region and Rehab Ibiza’s sushi offering is right up there in comparison. While we waited for the next treat, we caught up with co-owner Raymond who told us he likes a casual approach to his beach concept; he is looking for people to feel at home in the surroundings and his staff to offer a warm and genuinely friendly welcome, and so far, in our experience, he has exactly that. Before long a selection of starters arrive, including charcoal grilled squid with soy beans and chilli lemon dressing; beef carpaccio – thinly sliced tenderloin with roasted hazelnuts aged parmesan and balsamic; king crab salad featuring Atlantic king crab in a yellow curry dressing with crispy lettuce; Caesar salad – baby gem salad with roast chicken, crispy bacon, quail eggs and parmesan cheese and finally, yakitory chicken glazed with truffle teriyaki, pickled and daikon salad.

Each dish has a strong flavour, as well as stunning presentation, it was almost a shame to destroy them by eating them. Almost. Simoné’s explanation from earlier was evident in the tasting, each had minimal seasoning and dressing, just enough to complement the natural flavour. It was hard to pick a favourite as every dish had something special about it, the squid was fresh with a crisp, tangy flavour that grabbed the attention, the beef carpaccio melted in the mouth but, for me, the yakitory chicken was just about the winner. The subtle flavour of the truffle teriyaki combined with the picked daikon salad was unforgettable. We were all pretty full at this point, when our talented chef popped by to talk us through what he was preparing for the main course. Thank goodness for elasticated waistbands! Lobster was one of the mains and, a dish that has already caused quite a stir on the Talamanca beach front. Lobster Mondays is one of the first themed food nights Rehab Ibiza has launched and one that has already proved hugely popular. The lobster is prepared in three ways – Catalan, BBQ and classic Thermidor – and you can enjoy them at just 25 euros every Monday, fantastic value and the best start to your week.

Our feast continued with one of the aforementioned lobsters, BBQ style, with kimchi from Korea, chimichurri from Argentina and guacamole from Mexico as sides, which, when added to the roasted fennel, made for an unbelievable flavour explosion. We know where we will be every Monday this summer. Having described the burger earlier, which he sources from Burgos, in the North of Spain, which includes 70% meat, 20% belly fat and 10% marrow bone, cooked without any condiments, letting the natural flavour come through, we couldn’t wait to sample it and, in what was becoming the norm for the dining experience, it exceeded expectations. Melt in the mouth texture, bursting with flavour, this went straight to the top of the charts as a favourite, although the Jurassic prawn, caught off the coast of Formentera earlier that day, gave it a run for its money. Cooked in the Josper grill, they are huge, which actually makes freeing the meat from the shell that bit easier, and they offer a strong, again natural flavour as they melt in the mouth. The menu is packed with a myriad of mouth-watering choices and, in the hands of Simoné and his team, every option is a worthy one.

As the chance of a food coma increased and we began eying up the luxurious day beds on the beach for a snooze, the sharing Rehab dessert platter arrived! It never ceases to amaze that, no matter how much food you have consumed previously, there is always a little room for dessert. The sharing platter has a bit of everything, from the Piña Colada to the Salty Caramel, Deconstructed Cheesecake with red fruit, and, of course, the Chocolate Heaven. We have sampled cheesecake all over Ibiza and this one takes a bit of beating. Unike anything you will have seen, the combination of flavours is simply stunning. The salty caramel consisted of a sticky toffee pudding, salty caramel ice cream and a toffee sauce that is addictive! The grilled pineapple added a fresh twist to the piña colada and the chocolate heaven did exactly what it said on the tin. With various levels of chocolate ice cream, chocolate brownies and chocolate mousse, it’s a wonder we coould lift ourselves off our chairs at the end! Rehab Ibiza might be the new kid on the block, but the only beach club overlooking Talamanca will waste no time in capturing the hearts of foodies all over the island. Rehab is also open for breakfast daily from 9am, for those early birds that like an inspirational view with the first meal of the day and look out for some themed food events and those invitation only gatherings, this is going to be a popular destination in Ibiza 2017.
